Ingredients/Components

  • sugar - 1 c
  • cinnamon - 2 tsp
  • cream cheese - 6 oz
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar
  • ginger - 1 tsp
  • margarine - 4 Tbsp
  • nuts optional - 1/2 c
  • lemon juice - 1 Tbsp

How to make pumpkin nut roll:

Filling:1 c. powdered sugar4 Tbsp. margarine6 oz. cream cheese1/2 tsp. vanilla Beat eggs; add sugar; stir in pumpkin and lemon juice. Add dry ingredients. Put wax paper on cookie sheets with sides greased. Pour batter, spread evenly. Sprinkle 1/2 cup nuts on batter (optional). Bake at 375° for 15 minutes.

While warm, put dish towel over cake and dump out. Roll up in dish towel. Cool 30 minutes. (Powdered sugar on dish towel will keep cake from sticking to towel.) Mix filling ingredients well, spread on cake and roll back up. Freeze for at least 1 day.
