Pumpkin pie squares
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1 tsp
- eggs - 2 item
- chopped pecans - 1/2 c
- salt - 1/2 tsp
- flour - 1 c
- pumpkin - 2 c
- ginger - 1/2 tsp
- brown sugar, firmly packed - 1/2 c
- cloves - 1/4 tsp
- quick oats - 1/2 c
- can evaporated milk - 1 1/2
- butter, soft - 2 Tbsp
How to make pumpkin pie squares:
Combine flour, oats, 1/2 cup brown sugar and 1/2 cup butter until crumbly. Pat into ungreased 9 x 13-inch pan. Bake in 350° oven for 15 minutes.Combine pumpkin, milk, eggs, sugar, salt and spices. Blend well and pour into crust. Bake at 350° for 20 minutes.
Combine pecans, 1/2 cup brown sugar and 2 tablespoons butter. Sprinkle over filling. Return to oven and bake 15 to 20 minutes until filling is set. Cool in pan on rack. Makes 2 dozen, 2-inch squares.
