Pumpkin pie squares
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1 tsp
- eggs - 2 item
- chopped pecans - 1/2 c
- salt - 1/2 tsp
- brown sugar - 1/2 c
- butter - 2 Tbsp
- ginger - 1/2 tsp
- sifted flour - 1 c
- cloves - 1/4 tsp
- quick oats - 1/2 c
- butter or oleo - 1/2 c
- can evaporated milk - 1 1/2
- can pumpkin 2 c - 1 lb
How to make pumpkin pie squares:
Combine flour, oats, 1/2 cup brown sugar and 1/2 cup oleo. Mix until crumbly. Press into ungreased 13 x 9 x 2-inch pan. Bake in 350° oven for 15 minutes.Combine pumpkin, milk, eggs, sugar, salt, cinnamon and other spices in bowl. Blend well. Pour into crust and bake in 350° oven for 20 minutes.
Combine pecans, 1/2 cup brown sugar and 2 tablespoons butter or oleo. Sprinkle over pumpkin filling. Return to oven and bake 15 or 20 minutes or until filling is set. Cool. Makes 2 dozen.
