Pumpkin cheese cake
Ingredients/Components
- graham cracker crumbs - 1 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/8 tsp
- melted butter - 6 Tbsp
- plus 1 Tbsp - 1 c
- cream cheese, softened - 16 oz
- can pumpkin - 1 oz
- sour cream 2 c - 1 pt
- ginger and nutmeg - 1/4 tsp
How to make pumpkin cheese cake:
Mix crumbs with 1 tablespoon sugar and melted butter. Press into bottom of 10-inch spring-form pan. Chill.Beat cream cheese with 3/4 cup sugar until well blended. Beat in pumpkin, spices and salt. Add eggs, one at a time, beating well. Pour into crust and bake in 350° oven for 50 minutes. Remove cake. Raise temperature of oven to 400°. Mix sour cream, 1/4 cup sugar and vanilla. Spread over cake and bake 8 to 10 minutes more. Remove from oven and cool on rack. Then remove sides from pan and chill. May be served with whipped cream, if desired.
