  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • flour - 3/4 c
  • butter - 4 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar
  • ginger - 1 tsp
  • finely chopped pecans - 1 c
  • lemon juice - 1 tsp
  • each pkg - 2 oz

How to make pumpkin cake roll:

Filling:1 c. powdered sugar2 (3 oz. each) pkg. cream cheese4 Tbsp. butter1/2 tsp. vanilla Beat eggs on high speed of mixer for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Mix together flour and spices. Fold flour mixture into pumpkin mixture. Spread on greased and floured 15 x 10 x 1-inch pan. Top with finely chopped pecans. Bake at 350° for 15 to 18 minutes. Turn out on towel. Sprinkle with powdered sugar. Cool.

Filling: Combine powdered sugar, cream cheese, butter and vanilla. Beat until smooth. Spread filling over cooled cake and roll like jelly roll. Chill.
