- eggs - 3 item
- sugar - 1 c
- lemon juice - 1 tsp
- soda - 1 tsp
- cinnamon - 2 tsp
- flour - 3/4 c
- pumpkin - 2/3 c
- chopped nuts - 1 c
- sifted powdered sugar - 1 c
- pkg - 1 oz
- margarine - 1/4 c
- vanilla - 1 tsp
How to make pumpkin cake roll:
Beat eggs on high speed for 1 minute; add sugar and lemon juice, beating well. Add soda, salt and cinnamon. Fold in flour and pumpkin until well blended. Spread batter into greased and floured jelly roll pan. Sprinkle with chopped nuts. Bake at 375° for 20 minutes. Turn cake out onto dish towel that has been sprinkled with powdered sugar. Roll up in towel until completely cooled.Mix powdered sugar, cream cheese, margarine and vanilla until creamy. Unroll cake. Spread filling on cake. Roll cake. Refrigerate overnight. Slice.
