Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- pkg
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- margarine - 2 Tbsp
- lemon juice - 1 tsp
How to make pumpkin roll:
Filling:2 (3 oz.) pkg. cream cheese1 c. powdered sugar1 tsp. vanilla2 Tbsp. margarine1/2 c. chopped nuts Beat eggs 5 minutes. Add sugar slowly. Add pumpkin, lemon juice and all dry ingredients. Spread into greased and floured jellyroll pan. Sprinkle nuts on top. Bake at 350° for 15 minutes or less.Have a clean dish towel sprinkled with powdered sugar; turn roll out on towel. Roll up; set aside while making filling.
Filling: Beat cream cheese, powdered sugar, vanilla and margarine. Unroll roll; spread with filling and roll up again. Wrap in foil. Chill; will cut easier. Can be frozen for later use.
