Ingredients/Components

  • sugar - 1/2 c
  • cinnamon - 1 tsp
  • cream cheese - 8 oz
  • eggs - 2 item
  • milk - 1/2 c
  • salt - 1 tsp
  • egg yolks - 3 item
  • cold water - 1/2 c
  • pumpkin - 2 c
  • margarine - 1/2 c
  • unflavored gelatin - 2 pkg
  • Crust:24 graham crackers, rolled

How to make pumpkin cake:

Crust:24 graham crackers, rolled1/2 c. margarine1/3 c. sugar Crust: Mix together and put in a 9 x 13-inch pan.

Blend cream cheese, sugar and eggs and spread on graham cracker crust. Bake at 325° for 25 minutes. Dissolve gelatin with cold water. Set aside. Cook egg yolks, milk and sugar. Cook until thick. Add gelatin, pumpkin, salt and cinnamon. Set aside. Beat 3 egg whites until stiff. Fold in pumpkin mix. Spread on crust. Refrigerate overnight. Top with Cool Whip.
