Ingredients/Components

  • sour cream - 1 item
  • shredded Cheddar cheese - 1 c
  • oil for deep frying - 1 item
  • slices bacon, cooked and crumbled - 6 item
  • medium baking potatoes - 3 item

How to make potato skins:

Scrub potatoes thoroughly and rub skins with oil. Bake at 400° for 1 hour or until done. Cool potatoes. Cut in half lengthwise. Carefully scoop out pulp, leaving 1/4 to 1/8-inch shell. Pulp may be reserved for mashed potatoes. Deep fry shells in oil for 2 minutes until light brown. Drain on paper towels. Place skins on baking sheet; sprinkle with cheese and bacon. Place under broiler until cheese melts. Serve with sour cream.
