Ingredients/Components

  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • salt and pepper to taste - 1 item
  • minced parsley - 1 Tbsp
  • potatoes, diced - 5 item
  • medium onions, chopped - 2 item
  • rich milk - 2 c
  • ham sandwich ham, cut into shreds - 4 oz

How to make potato chowder:

Peel and dice potatoes; soak in cold water. Fry ham and onions together until nicely browned. Drain diced potatoes and place layer in bottom of stewpot; add layer of ham and onions, then sprinkle with parsley. Repeat layers until all is used. Cover completely with cold water. Bring to boiling point over medium heat and cook until potatoes are tender. Add milk, salt and pepper. Melt butter in the same pan ham and onions were cooked and add flour to make a smooth paste. Bring chowder to boil and add thickening, stirring gently until mixture boils again. Place two crushed soda crackers in bottom of each bowl before serving.
