Zesty potato salad
Ingredients/Components
- sour cream - 1/2 c
- salt - 1/2 tsp
- pepper - 1/2 tsp
- prepared horseradish - 2 Tbsp
- mayonnaise - 1/2 c
- parsley, chopped - 1 Tbsp
- green onions, chopped - 2 item
- red potatoes - 2 lb
- boiled eggs, chopped - 4 item
- bacon strips, cooked and crumbled - 3 item
How to make zesty potato salad:
Cook potatoes in salted water until done; drain, cool, then cut into cubes. In large bowl, combine mayonnaise, sour cream, horseradish, parsley, salt and pepper. Mix until smooth. Stir in potatoes, bacon, eggs and onions. Cover and chill for up to 24 hours. Yields 6 servings.Recipe categories: Salads, Potato, Vegetables.
