  • vanilla - 1 tsp
  • peanut butter - 1 item
  • medium potato - 1 item

How to make potato candy:

Boil potato (no salt), let cool. Mash up fine. Mix potato, vanilla and powdered sugar until thick enough to roll out. Roll out 1/2 of mixture between 2 sheets of wax paper until 1/4-inch thick. Cover with peanut butter. Roll up and slice. Let dry 1 hour.
