Pork chops with scalloped potatoes
Ingredients/Components
- flour - 3 Tbsp
- oil - 3 Tbsp
- butter or oleo - 3 Tbsp
- pepper
- can chicken broth - 1 1/2
- salt and pepper - 1 item
- pork chops - 6 item
- medium onion, sliced - 1 item
- thinly sliced peeled potatoes - 6 c
- paprika and fresh parsley optional - 1 item
How to make pork chops with scalloped potatoes:
In a saucepan, melt butter. Stir in flour, salt and pepper. Add chicken broth; cook and stir until mixture boils. Cook for 1 minute. Remove from heat and set aside. In a skillet, brown chops in oil. Season more if desired. In a greased 9 x 13 x 2-inch baking dish, layer potatoes and onion. Pour broth mixture over. Place chops on top. Cover and bake 1 hour at 350°. Uncover and bake 30 minutes longer or until potatoes are tender. Sprinkle with parsley and paprika if desired.Recipe categories: Main dish, Pork chop, One Dish meal.
