Ingredients/Components

  • butter or margarine - 2 Tbsp
  • salt - 1/2 tsp
  • water - 2 Tbsp
  • paprika - 1/4 tsp
  • pepper - 1/4 tsp
  • chopped onion - 1 c
  • chicken broth - 1/3 c
  • minced parsley - 2 Tbsp
  • shredded cheese - 2/3 c
  • cans cream of mushroom soup undiluted - 2 item
  • cans of shrimp, rinsed and drained - 2 1/4
  • jar of sliced mushrooms, drained - 1 1/2
  • fresh cooked or canned crabmeat, drained - 1/2 lb
  • cooked wild brown or white rice or a mixture of both optional - 1 item

How to make stuffed sole:

In saucepan, saute onion, shrimp and mushrooms in butter until onion is tender. Add crabmeat. Heat through thoroughly. Sprinkle fillets with salt, pepper and paprika. Spoon crabmeat mixture on fillets. Roll up and fasten with a toothpick. Place in a greased 13 x 9 x 2-inch baking dish. Combine the soup, broth and water. Blend until smooth. Pour over fillets. Sprinkle with cheese. Cover and bake at 400° for 30 minutes. Sprinkle with parsley. Return to oven, uncovered, for 5 minutes until fish flakes easily with a fork.
