Ingredients/Components

  • oil - 2 Tbsp
  • lemon juice - 2 Tbsp
  • grated lemon rind - 1 tsp
  • chopped celery - 1/4 c
  • bay leaf - 1 item
  • small onion, chopped - 1 item
  • sprigs parsley - 2 item
  • chopped parsley - 1 Tbsp
  • freshly ground black pepper - 1 item
  • fish fillets, skinned - 2 lb
  • hot water or white wine - 1 c
  • Place skinned fillets on top of vegetables, or roll each fillet; secure with a toothpick and place on vegetables

How to make poached fish:

In a large shallow pan, saute the onion and celery in oil until tender. Place skinned fillets on top of vegetables, or roll each fillet; secure with a toothpick and place on vegetables. Add water or wine and seasonings. Cover and simmer about 8 minutes
