Ingredients/Components
- oil - 2 Tbsp
- lemon juice - 2 Tbsp
- grated lemon rind - 1 tsp
- chopped celery - 1/4 c
- bay leaf - 1 item
- small onion, chopped - 1 item
- sprigs parsley - 2 item
- chopped parsley - 1 Tbsp
- freshly ground black pepper - 1 item
- fish fillets, skinned - 2 lb
- hot water or white wine - 1 c
- Place skinned fillets on top of vegetables, or roll each fillet; secure with a toothpick and place on vegetables
How to make poached fish:
In a large shallow pan, saute the onion and celery in oil until tender. Place skinned fillets on top of vegetables, or roll each fillet; secure with a toothpick and place on vegetables.
