Ingredients/Components

  • salt - 3/4 tsp
  • flour - 2 Tbsp
  • oil
  • buttermilk - 1/2 c
  • egg, beaten - 1 item
  • Worcestershire sauce - 2 tsp
  • chopped onion - 1/3 c
  • chili powder - 2 tsp
  • hamburger - 1 lb
  • self-rising cornmeal - 10 Tbsp
  • cooked pinto beans - 2 c
  • canned tomatoes or 1 c - 2 c

How to make pinto bean casserole:

Brown hamburger and onion; drain off fat. Add Worcestershire sauce, chili and tomatoes or catsup. Add beans. Pour into a 13 x 9-inch casserole. Mix the flour, cornmeal, buttermilk, egg and oil. Stir until blended. Spread on top of bean mixture. Bake for 20 minutes at 425°. Good with slaw or tossed salad.
