Hamburger corn-pone pie
Ingredients/Components
- ground beef - 1 lb
- oil - 1 Tbsp
- Worcestershire sauce - 1 tsp
- canned kidney beans, drained - 1 c
- chopped onion - 1/3 c
- chili powder - 2 tsp
- canned tomatoes - 1 c
- corn bread batter - 1 c
- flour
- salt - 1/2 tsp
- sugar - 2 Tbsp
- milk - 1 c
- yellow cornmeal - 3/4 c
- baking powder
- egg or 2 egg whites - 1 item
How to make hamburger corn-pone pie:
Corn Bread Batter:1 c. flour1/2 tsp. salt2 Tbsp. sugar1 c. milk3/4 c. yellow cornmeal2 1/2 tsp. baking powder1 egg or 2 egg whites1/4 c. oil Sift together dry ingredients. Add eggs, milk and oil. Stir quickly and lightly. Do not beat. Set aside.Brown the meat and onion in melted oil. Drain fat. Add seasonings and tomatoes. Cover and simmer over low heat for 15 minutes. Add kidney beans. Pour meat mixture into a lightly oiled 1 1/2-quart casserole. Top with 1 cup of the corn bread batter. Bake at 425° for about 20 minutes until golden brown. The remainder of the corn bread batter can be divided into 6 lightly oiled muffin cups. Bake with casserole for 20 to 30 minutes.
