Pineapple chutney
Ingredients/Components
- unsweetened pineapple juice - 3/4 c
- white wine vinegar - 2 tsp
- red onion - 1/2 c
- golden raisins - 2 Tbsp
- chopped jalapeno - 1/2 tsp
- red bell pepper - 1/4 c
- lime zest - 1/2 tsp
- chopped crystallized ginger - 1/2 tsp
- small cubes fresh pineapple
- pulp off 1 large lime
How to make pineapple chutney:
Bring all ingredients to a boil in a medium saucepan, over medium heat. Reduce the heat to low and simmer, uncovered, until the fruit is tender and sauce has thickened, about 45 minutes. Stir occasionally. Good with duck, pork, chicken, grilled meats. Put on meats just before serving. Makes enough for 14 ounces of meat.Recipe categories: Sauces, Condiments, etc., Chutneys.
