Pickled radishes
Ingredients/Components
- sugar - 1/2 c
- salt - 2 tsp
- cider vinegar - 1 c
- pickling spice - 1 Tbsp
- bunches radishes - 5 item
How to make pickled radishes:
Day Ahead: Cut a double thickness of 5-inch square cheesecloth. On it, place pickling spice. Pull corners up to form a small bag and tie securely with colorfast or undyed cotton string. In 2-quart saucepan over medium-high heat, heat vinegar, sugar, salt, spice bag and 3/4 cup water to boiling. Reduce heat to low. Cover and simmer 10 minutes to blend flavors.Meanwhile, trim stems from radishes, reserving a few leaves for garnish. Cut large radishes in half. Place radishes in a large bowl. Pour hot vinegar mixture over radishes in bowl. Cover and refrigerate overnight.
To Serve: Place radishes in shallow bowl with some vinegar mixture. Garnish with reserved leaves. Makes 15 accompaniment servings.
