Ingredients/Components

  • sugar - 3 c
  • water
  • white vinegar
  • red onion, sliced - 1 item
  • can allspice - 1 item
  • herring fillets - 20 item
  • can bay leaves - 1 item

How to make pickled herring:

Soak fillets in cold water for 6 hours, changing water often. Rub fillets under cold water until not slick. Combine above ingredients; heat until sugar dissolves. Cool. Layer slices of herring, sliced red onion, bay leaves and whole allspice. Add brine; let stand for 3 days.

A 72 ounce jar will hold recipe using 12 herring fillets.
