Ingredients/Components
- sugar - 3 c
- water
- white vinegar
- red onion, sliced - 1 item
- can allspice - 1 item
- herring fillets - 20 item
- can bay leaves - 1 item
How to make pickled herring:
Soak fillets in cold water for 6 hours, changing water often. Rub fillets under cold water until not slick. Combine above ingredients; heat until sugar dissolves. Cool. Layer slices of herring, sliced red onion, bay leaves and whole allspice. Add brine; let stand for 3 days.A 72 ounce jar will hold recipe using 12 herring fillets.
