  • sugar - 3 c
  • water - 3 c
  • vinegar - 6 c
  • celery seed - 2 Tbsp
  • mustard seed - 4 Tbsp
  • large onions - 5 item
  • to 20 large beets - 15 item

How to make pickled beets:

Cook and peel beets. When you can stick a fork into beet easily, it is done. After peeled, slice in 1/4-inch slices. Set aside.

In a large kettle, put vinegar, water, spices and onions. Bring to a rolling boil. Add beets as soon as it comes back to a boil. Fill hot jars and can. Can use Sugar Twin, equal to 3 cups sugar for diabetics.
