Ingredients/Components

  • grated Parmesan cheese - 1 c
  • olive oil - 3 Tbsp
  • dried basil - 2 c
  • pine nuts or pecans - 1 c

How to make pesto:

Combine all ingredients in food processor. Amounts may be altered according to tate (some pestos are very oily, for example). Keep in airtight container in refrigerator for up to 6 months.

Always start with a small amount. You can always add more! Sprinkle on pasta or stir into vegetable dishes. Excellent on tomato sandwiches. Mix with cream cheese and use as a cracker spread.

Slice loaf of French or Italian bread in half lengthwise. Butter cut surfaces and sprinkle with Pesto. Top with sliced tomatoes and sliced Mozzarella. Place under broiler until cheese is melted and browned.
