Pasta primavera
Ingredients/Components
- lemon juice - 1 tsp
- grated Parmesan cheese - 6 Tbsp
- chopped onion - 1/2 c
- chicken broth - 1/4 c
- sliced zucchini - 1 c
- Mozzarella cheese, shredded - 2 oz
- oregano - 1/2 tsp
- olive oil - 4 tsp
- chopped parsley - 1/4 c
- sliced mushrooms - 3/4 c
- dried basil - 1 tsp
- clove garlic, crushed - 1 item
- coarsely ground pepper - 1 item
- broccoli florets - 1 c
- cooked spaghetti - 2 c
- halved cherry tomatoes - 3/4 c
How to make pasta primavera:
In a large skillet, heat olive oil. Add garlic, onion, zucchini and mushrooms. Saute until onion is translucent. Add broccoli and broth. Cover and steam 5 to 7 minutes or until broccoli is just tender-crisp. Add tomatoes, parsley, lemon juice and seasonings. Toss thoroughly. Serve over spaghetti. Sprinkle with Mozzarella and Parmesan.
