Ingredients/Components

  • cornstarch - 1 Tbsp
  • water - 1 c
  • molasses - 1 Tbsp
  • ground ginger - 1/4 tsp
  • green onions, sliced - 2 item
  • cloves garlic, minced - 3 item
  • soy sauce - 2 Tbsp
  • olive oil - 2 Tbsp
  • hot cooked rice - 1 item
  • medium onion, sliced - 1 item
  • chicken breast halves, skinned, boned and cut in strips - 4 item
  • sweet red bell pepper, cut into 1/4-inch strips - 1 item
  • green bell pepper, cut into 1/4-inch strips - 1 item

How to make pepper chicken:

Saute chicken in hot oil in a heavy skillet 2 to 3 minutes. Add water and next 3 ingredients; bring to a boil. Cover, reduce heat and simmer 8 minutes. Stir in bell pepper strips.

Combine cornstarch, soy sauce and molasses; stir into chicken mixture. Bring to a boil, stirring constantly; boil 1 minute.

Serve immediately over hot cooked rice. Sprinkle with green onions. Yields 4 servings.
