Penne alla napolitana
Ingredients/Components
- grated Parmesan - 1/2 c
- olive oil - 4 Tbsp
- tomato sauce - 2 c
- finely chopped garlic - 2 Tbsp
- red pepper - 1 tsp
- pitted olives, sliced - 1 c
- cubed Mozzarella - 1/2 c
- penne mostaccioli - 12 oz
- packed fresh basil leaves, chopped - 1/4 c
How to make penne alla napolitana:
Cook mostaccioli for 8 to 10 minutes. Drain; toss with one tablespoon olive oil. Return to pan and keep warm. Saute garlic slowly in three tablespoons of olive oil until softened but not browned. Add olives, basil, red pepper and tomato sauce. Heat; stir in cheeses and heat, stirring until chunks begin to melt. Pour over mostaccioli.Recipe categories: Pasta, Main dish, Penne.
