Ingredients/Components

  • chopped pecans - 2/3 c
  • pkg - 1 oz
  • vanilla extract - 1 tsp
  • salt - 1/4 tsp
  • all-purpose flour - 1 c
  • butter or margarine, softened - 1/2 c
  • butter or margarine, melted - 1 Tbsp
  • packed dark brown sugar - 3/4 c
  • Filling:1 egg
  • maraschino cherry halves optional - 1 item

How to make pecan tarts:

Filling:1 egg3/4 c. packed dark brown sugar1 Tbsp. butter or margarine, melted1 tsp. vanilla extract2/3 c. chopped pecans maraschino cherry halves (optional) In a mixing bowl, beat cream cheese and butter; blend in flour and salt. Chill for 1 hour. Shape into 1-inch balls; press into the bottom and up the sides of greased mini-muffin cups.

For filling, beat the egg in a small mixing bowl. Add brown sugar, butter and vanilla. Mix well. Stir in pecans. Spoon into shells. Bake at 325° for 25 to 30 minutes. Cool in pan on a wire rack. Decorate with maraschino cherries, if desired. Yield: about 20.
