  • vanilla - 1/2 tsp
  • pinch of salt - 1 item
  • cake flour, sifted
  • unsalted butter - 1 c
  • pecans, finely chopped - 1/2 c
  • light brown sugar, loosely packed - 1 c

How to make pecan shortbread cookies:

In a mixing bowl, beat together the butter, light brown sugar, vanilla and salt until light and fluffy. Stir in the flour and nuts, just enough to combine. Do not overmix or cookies will be tough. Form the dough into a ball and refrigerate for 30 minutes.

Preheat oven to 325°. Roll out the dough on lightly floured board to about 1/4-inch. Cut cookies into desired shapes and place on baking sheet lined with parchment paper. Bake 15 to 20 minutes, until edges are golden. Cool on rack. Yields 2 dozen cookies.
