Ingredients/Components

  • vanilla - 1/2 Tbsp
  • granulated sugar - 1 c
  • salt - 1/2 tsp
  • flaked coconut
  • flour, sifted - 2 c
  • egg unbeaten - 1 item
  • chopped walnuts or pecans - 1/2 c
  • jar apricot jam - 1 oz
  • shortening Crisco or the like - 3/4 c

How to make apricot squares:

Cream first 3 ingredients together. Add next 4 ingredients. Mix well. Makes a very stiff dough. Put 3/4 of mixture in a 10 x 15-inch pan and press down firmly to cover bottom of pan.

First, spread apricot jam evenly over mixture in pan. (Do not spread right to edge, as jam will burn.) Second, sprinkle with chopped walnuts or pecans over top. Third, crumble remaining dough over top so that jam shows through in spots.

Bake at 350° for 30 to 35 minutes, until slightly browned. Cool before cutting.
