Peanut butter pie



  • sugar
  • vanilla - 1 Tbsp
  • milk
  • cornstarch - 1/2 c
  • sifted powdered sugar - 1 c
  • margarine - 1/2 c
  • peanut butter - 1/2 c
  • beaten eggs - 2 item
  • whipping cream or Cool Whip - 3/4 c
  • baked 9-inch pie crust - 1 item

How to make peanut butter pie:

In a mixing bowl, cut the peanut butter into the powdered sugar until crumbly. Set aside. For filling in a medium saucepan, combine sugar and cornstarch. Add milk all at once. Cook and stir until bubbly. Cook 2 minutes more. Remove from heat and gradually stir in the eggs. Return to heat and cook 2 more minutes. Stir the margarine and vanilla into the mixture. Sprinkle the baked crust with half the peanut butter mixture. Mound the filling on top. Cover and chill 1 hour. In a mixing bowl, beat the whipping cream just until stiff peaks form. Spread whipping cream over pie. Sprinkle with remaining peanut butter. Chill at least 2 hours before serving.
