Coconut pie
Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- milk - 2 c
- salt - 1/4 tsp
- cornstarch - 1/4 c
- egg yolks - 3 item
- coconut - 1 c
- sifted powdered sugar - 1/4 c
- whipping cream - 1 c
- margarine - 2 Tbsp
- baked 9-inch pie shell - 1 item
- toasted coconut flakes for garnish - 1 item
How to make coconut pie:
Combine first 3 ingredients in saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until thickened and bubbly. Cook 1 minute. Beat yolks; gradually add some hot mixture into yolks. Add to remaining hot mixture, stirring constantly. Cook, while stirring, for 30 seconds. Remove from heat and stir in margarine, vanilla and coconut. Pour. Cool. Refrigerate 1 to 2 hours.Beat cream. Add powdered sugar 1 teaspoon at a time. Garnish with toasted coconut, if desired.
