  • sugar - 2 c
  • vanilla - 1 tsp
  • butter - 1 tsp
  • soda - 2 tsp
  • hot water - 1/2 c
  • white Karo syrup - 1 c
  • peanuts - 2 c

How to make peanut brittle:

Combine in 4-quart saucepan sugar, water and syrup; cook until it is 230° (need a candy thermometer). Over medium heat, add butter or margarine. Cook until it is 302°. Remove from heat; add soda and vanilla. Beat until foaming reaches peak; pour into greased cookie sheet (prepared earlier) and spread thin. Let cool and break into pieces. Store in sealed coffee can.
