Peanut brittle
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- butter - 1 Tbsp
- baking soda - 1 tsp
- dash of salt - 1 item
- light corn syrup - 1/2 c
- raw Spanish peanuts, shelled - 1 c
How to make peanut brittle:
In a 1-quart microproof bowl, mix corn syrup, sugar, salt and peanuts. Microwave on High for 7 to 8 minutes. Stir in vanilla and butter, continue on High for 2 or 3 minutes. Mixture should be slightly browned. Add baking soda and stir quickly. Pour onto lightly greased cookie sheet, let cool. Break into pieces. Makes 1 pound. (Double cook 10 minutes.
