  • cornstarch - 1/3 c
  • sliced, fresh peaches - 8 c
  • almond extract - 1/2 tsp
  • melted butter - 1/4 c
  • pastry recipe follows - 1 item
  • all-purpose flour
  • pinch of salt - 1 item
  • solid vegetable shortening - 1/2 c
  • ice water - 4 Tbsp

How to make peach cobbler:

Pastry:2 c. all-purpose flour2 Tbsp. sugar pinch of salt1/2 c. solid vegetable shortening4 Tbsp. ice water1/2 c. melted butter1/4 c. sugar Combine sugar and cornstarch. Toss with peaches. Add extract and butter; set aside.

Combine flour, sugar and salt in a mixing bowl. Cut shortening into flour until it is the consistency of corn meal. Gradually add ice water until dough holds its shape. Roll out on floured board and cut into strips. Pour peach filling into buttered 13 x 9 x 2-inch baking dish. Crisscross dough strips over filling. Brush pastry with remaining melted butter. Sprinkle with sugar. Bake in 400° oven for 30 minutes or until crust is browned.
