Ingredients/Components
- milk - 1/3 c
- sour cream - 3/4 c
- butter or margarine - 1/2 c
- salt - 1/4 tsp
- egg, beaten - 1 item
- grated Cheddar cheese - 1 c
- can creamed corn - 1 item
- large sweet onion - 1 item
- corn muffin mix or 1 box Jiffy
How to make onion shortcake:
Saute onion slowly in margarine. Combine muffin mix, egg, milk and corn. Place in greased 8-inch square pan. Add sour cream, salt and 1/2 cup cheese to onion. Spread over batter. Sprinkle with remaining cheese. Bake at 425° for 25 to 30 minutes. Cut into squares.Double the recipe and bake in 9 x 13-inch pan at 375° to 400° for 45 to 50 minutes.
