Onion shortcake

Ingredients/Components

• milk - 1/3 c
• sour cream - 3/4 c
• butter or margarine - 1/2 c
• salt - 1/4 tsp
• egg, beaten - 1 item
• grated Cheddar cheese - 1 c
• can creamed corn - 1 item
• large sweet onion - 1 item
• corn muffin mix or 1 box Jiffy

How to make onion shortcake:

Saute onion slowly in margarine. Combine muffin mix, egg, milk and corn. Place in greased 8-inch square pan. Add sour cream, salt and 1/2 cup cheese to onion. Spread over batter. Sprinkle with remaining cheese. Bake at 425° for 25 to 30 minutes. Cut into squares.

Double the recipe and bake in 9 x 13-inch pan at 375° to 400° for 45 to 50 minutes.
