Ingredients/Components
- milk - 1/3 c
- sour cream - 1 c
- salt - 1/4 tsp
- butter - 1/4 c
- egg, beaten - 1 item
- shredded sharp Cheddar cheese - 1 c
- cream-style corn - 1 c
- large Spanish onion - 1 item
- 1/2 corn muffin mix Jiffy - 1 item
How to make onion shortcake:
Slice onion into rings and cook slowly in butter until transparent. Combine corn mix, egg, milk and corn. Pour into buttered 8-inch square pan. Add sour cream, salt and 1/2 the cheese to onion. Mix well and spread evenly over corn batter. Sprinkle with remaining cheese. Bake at 425° for 30 minutes. Serve hot.Recipe categories: < 60 mins, Side dish, Oven.
