Ingredients/Components

  • heavy cream - 1 c
  • grated Parmesan cheese - 1/4 c
  • unsalted butter - 6 Tbsp
  • grated Gruyere - 1/4 c
  • baking potatoes, peeled and cut into 1/8-inch slices - 1 lb
  • thinly sliced onions about 3 - 4 c

How to make onion and potato gratin:

In a large skillet, cook onions with salt and pepper to taste in 3 tablespoons butter over moderate heat, stirring occasionally, until they are golden. Spoon half the onions into a buttered 2-quart gratin dish, cover them with the potato slices and sprinkle the potatoes with salt and pepper. Cover the potatoes with the remaining onions. Pour the cream over the mixture and sprinkle the mixture with Parmesan and Gruyere. Dot the top with 3 tablespoons butter and bake in preheated 400° oven for 30 minutes or until golden brown. Serves 4 to 6.
