Old-fashioned chicken and dumplings
Ingredients/Components
- salt - 1/2 tsp
- flour
- baking powder - 2 tsp
- vegetable oil - 2 Tbsp
- chicken broth - 1/2 c
- small chicken - 1 item
How to make old-fashioned chicken and dumplings:
Wash chicken off with cold water and place in large pot; cover with water and bring to a boil. Reduce heat and simmer, covered, 1 1/2 hours or until chicken is tender. Remove chicken, bone out and set aside.For the dumplings: Combine flour, baking powder and salt. Add 1/2 cup cooled chicken broth and oil. Stir until dry ingredients are moistened. Turn dough onto a floured surface and form a ball. Then roll dough to a thickness of 1/16-inch. Cut into 2 x 1-inch strips. Drop dumplings into boiling broth; cover and cook 15 minutes, stirring occasionally. Add chicken pieces and season with salt and pepper to taste. Add flour to thicken, if needed.
