Oatmeal muffins
Ingredients/Components
- salt - 1/2 tsp
- buttermilk - 1 c
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- sifted flour - 1 c
- cooking oil - 1/4 c
- brown sugar, firmly packed - 1/2 c
- egg, beaten - 1 item
- quick cooking oats - 1 c
How to make oatmeal muffins:
Sift together the flour, baking powder baking soda, salt and cinnamon. Combine oats, brown sugar and buttermilk in a bowl. Let stand for 10 minutes. Add egg and oil; mix well. Add dry ingredients and stir just enough to moisten. Spoon batter into greased or paper-lined muffin cups, filling 2/3 full. Bake at 375° for 15 minutes or until done.
