  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • brown sugar - 1 c
  • coconut - 1 c
  • baking soda - 1 tsp
  • boiling water
  • rolled oats - 1 c
  • nuts, chopped - 1/2 c
  • white sugar - 1 c
  • butter or shortening - 1/2 c
  • Let stand 20 minutes
  • cream or canned milk - 1/4 c

How to make oatmeal cake:

Pour boiling water over rolled oats. Let stand 20 minutes. In the meanwhile, cream butter with white sugar, brown sugar, eggs and vanilla. Beat well and add the oatmeal mixture. Sift the flour, salt, baking soda and cinnamon; add to the mixture. Beat until smooth. Pour in greased 9 x 12 x 2-inch deep oblong pan. Bake about 40 minutes at 350°. Frost with Broiled Frosting.Broiled Frosting for Oatmeal Cake:3 Tbsp. butter, melted1/4 c. cream or canned milk1/2 c. brown sugar1/2 tsp. vanilla1 c. coconut1/2 c. nuts, chopped Mix ingredients together, spread over warm cake in pan. Brown under broiler. Cut in squares.
