  • rolled oats - 1 c
  • boiling water
  • butter - 1/2 c
  • sugar - 1 c
  • brown sugar - 1 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour
  • baking soda - 1 tsp
  • salt - 1/2 tsp
  • cinnamon - 1 tsp
  • nutmeg - 1/2 tsp
  • melted butter
  • cream - 2 Tbsp
  • coconut - 1/2 c
  • walnuts, chopped - 1/2 c

How to make oatmeal cake:

Icing:3 Tbsp. melted butter2/3 c. brown sugar2 Tbsp. cream1/8 tsp. salt1/2 c. coconut1/2 c. walnuts, chopped Combine oats and water. Let stand 20 minutes. Cream together butter and sugars. Add eggs and vanilla.

Sift together flour, soda and spices. Mix into egg mixture. Beat 2 minutes. Turn into a greased 9 x 13-inch pan. Bake 30 minutes at 350°.

Icing: Combine and spread on cake while it is still warm. Place cake 3-inches under broiler. Heat until icing bubbles.
