Ingredients/Components
- rolled oats - 1 c
- boiling water
- butter - 1/2 c
- sugar - 1 c
- brown sugar - 1 c
- eggs - 2 item
- vanilla - 1 tsp
- flour
- baking soda - 1 tsp
- salt - 1/2 tsp
- cinnamon - 1 tsp
- nutmeg - 1/2 tsp
- melted butter
- cream - 2 Tbsp
- coconut - 1/2 c
- walnuts, chopped - 1/2 c
How to make oatmeal cake:
Icing:3 Tbsp. melted butter2/3 c. brown sugar2 Tbsp. cream1/8 tsp. salt1/2 c. coconut1/2 c. walnuts, chopped Combine oats and water. Let stand 20 minutes. Cream together butter and sugars. Add eggs and vanilla.Sift together flour, soda and spices. Mix into egg mixture. Beat 2 minutes. Turn into a greased 9 x 13-inch pan. Bake 30 minutes at 350°.
Icing: Combine and spread on cake while it is still warm. Place cake 3-inches under broiler. Heat until icing bubbles.
