Ingredients/Components
- boiling water
- butter - 1/2 c
- sugar - 1 c
- flour
- cinnamon - 1 tsp
- salt - 1/2 tsp
- quick oats - 1 c
- brown sugar - 1 c
- eggs - 2 item
- baking soda - 1 tsp
- nutmeg - 1 tsp
- Cream butter and sugar thoroughly
- coconut - 1 c
- chopped nuts - 1 c
- light cream - 1/2 c
- vanilla - 1/4 tsp
How to make oatmeal cake:
Pour boiling water over oats and mix well. Cream butter and sugar thoroughly. Beat in eggs; stir in soaked oatmeal. Sift flour and remaining dry ingredients. Stir into oatmeal mixture. Pat into 13 x 9 x 2 pan. Bake at 350° for 30 to 35 minutes. Cool in pan. Spread with topping. Broil until golden, about 2 to 3 minutes.Broil Topping:1/4 c. brown sugar1/2 c. sugar6 tsp. butter1 c. coconut1 c. chopped nuts1/2 c. light cream1/4 tsp. vanilla Combine first 6 ingredients.
