Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- flour
- margarine or butter - 1/2 c
- baking soda - 1 tsp
- boiling water
- shredded coconut - 1 c
- firmly packed brown sugar - 1/2 c
- chopped walnuts - 1 c
- ground cinnamon - 1 tsp
- oats - 1 c
How to make oatmeal cake:
Topping:1/2 c. margarine or butter1 c. firmly packed brown sugar1/2 c. milk1 c. chopped walnuts1 c. shredded coconut1 tsp. vanilla Mix oats and water. Let stand until cool. Stir together next 4 ingredients. In large bowl, stir butter and sugars until blended. Add eggs and vanilla; mix well. Add flour; mix thoroughly. Stir in oatmeal. Turn into ungreased 9 x 9 x 2-inch baking pan. Bake in 350° oven 45 minutes or until cake springs back when touched. Spread with topping while cake is still warm.Topping: In small saucepan, mix together margarine or butter, sugar and milk. Bring to boil for 8 to 10 minutes. Remove from heat. Add nuts, coconut and vanilla.
