  • flour
  • oats
  • baking powder
  • salt - 1 tsp
  • baking soda - 1/2 tsp
  • milk - 3 Tbsp
  • eggs - 3 item
  • sugar - 3/4 c
  • vegetable oil - 1/3 c
  • vanilla - 1 tsp
  • crushed ripe bananas
  • chopped walnuts - 1/2 c

How to make oatmeal banana bread:

In a large bowl, stir together the flour, oats, baking powder, salt and soda. Set aside. In a small mixer bowl, beat eggs. Add sugar, oil and vanilla. Mix well.

In a small bowl combine banana and milk. Add banana mixture to egg mixture, alternately with dry ingredients. Stir in walnuts. Turn batter into a greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 55 to 60 minutes or until toothpick inserted into center comes out clean. Cool in pan for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight for easier slicing. Makes 1 loaf.
