Ingredients/Components
- sugar - 1 c
- cinnamon - 1/2 tsp
- eggs - 2 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- milk - 1/4 c
- salt - 1/2 tsp
- flour
- brown sugar - 1 c
- nutmeg - 1/2 tsp
- egg yolks - 2 item
- coconut - 1 c
- soda - 1 tsp
- boiling water
- shortening - 1/2 c
- quick cooking oats - 1 c
- Add eggs, then vanilla
How to make oatmeal cake:
Cream shortening with sugar and brown sugar. Add eggs, then vanilla. Mix oatmeal with boiling water and let set until water is absorbed. Sift together flour, soda, salt, cinnamon and nutmeg. Add oatmeal to creamed mixture and then add dry ingredients. Bake in large loaf pan at 350° for approximately 30 to 40 minutes.Icing:1 stick butter1/4 c. milk1 c. brown sugar2 egg yolks1 c. coconut1 c. chopped pecans Melt butter and add remaining ingredients.
