  • salt - 1 tsp
  • water - 1 c
  • margarine - 1 Tbsp
  • rolled oats - 1 c
  • warm water - 1/3 c
  • honey - 2 Tbsp
  • pinch of sugar - 1 item
  • active dry yeast - 1 Tbsp
  • unbleached white flour approximately

How to make oatmeal bread:

In a small saucepan, boil 1 cup water and add oats, honey, margarine and salt. Let cool. Combine yeast, sugar and 1/3 cup warm water in a large bowl or a food processor. Let proof. Add 2 cups flour to the yeast mixture. When oat mixture is warm, but not hot, add it to the flour mixture and knead dough 10 minutes or process 15 seconds or until dough is smooth and elastic, adding more flour if necessary.

Place dough in a large oiled bowl, cover with a towel and let rise in a warm place for 1 hour or until doubled in bulk. Form dough into a loaf and place in a loaf pan greased with margarine. Cover and let rise about 1 hour or until doubled in bulk. Preheat oven to 350°. Bake for 45 minutes or until golden brown. This can also be made in bread machine. Makes 1 loaf.
