Ingredients/Components

  • sugar - 1/2 c
  • chopped pecans - 1/2 c
  • salt - 1/2 tsp
  • flour - 1 Tbsp
  • butter - 4 Tbsp
  • baking powder - 2 tsp
  • baking soda - 1/2 tsp
  • egg - 1 item
  • vegetable shortening - 1 Tbsp
  • sifted flour
  • orange juice - 1/2 c
  • orange marmalade - 1/4 c
  • mashed potatoes - 2 Tbsp

How to make nut bread:

Cream butter and shortening. Add sugar. Beat until light and fluffy. Add egg, orange marmalade and cooked, mashed potatoes. Beat until blended. Sift together 2 1/4 cups flour, baking powder, baking soda and salt. Use 1 tablespoon flour to toss with chopped pecans (set aside).

To creamed butter, add remaining flour mixture alternating with orange juice. Fold nuts in. Pour into greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 55 minutes.
