Ingredients/Components
- sugar - 1/2 c
- chopped pecans - 1/2 c
- salt - 1/2 tsp
- flour - 1 Tbsp
- butter - 4 Tbsp
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- egg - 1 item
- vegetable shortening - 1 Tbsp
- sifted flour
- orange juice - 1/2 c
- orange marmalade - 1/4 c
- mashed potatoes - 2 Tbsp
How to make nut bread:
Cream butter and shortening. Add sugar. Beat until light and fluffy. Add egg, orange marmalade and cooked, mashed potatoes. Beat until blended. Sift together 2 1/4 cups flour, baking powder, baking soda and salt. Use 1 tablespoon flour to toss with chopped pecans (set aside).To creamed butter, add remaining flour mixture alternating with orange juice. Fold nuts in. Pour into greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 55 minutes.
