  • sugar - 2 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour - 1/2 c
  • butter - 4 Tbsp
  • water - 1/2 c
  • powdered sugar - 1 item
  • cooking oil - 1 item

How to make new orleans beignets:

In saucepan over medium heat, combine water, butter, sugar and dash of salt. Bring to a boil, stirring, until butter melts. Add flour all at once. Over low heat, cook and stir until mixture forms into a ball. Remove from heat. Vigorously beat in eggs, one at a time, until mixture is smooth and shiny. Add vanilla, mixing well.

Drop rounded teaspoon of dough into deep, hot oil, cooking only a few at a time, until golden brown. Drain on paper towels. Sprinkle with powdered sugar. Yields 2 dozen.
