Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- vanilla - 1 tsp
- sour cream - 2 c
- salt - 1 tsp
- flour - 2 c
- butter - 1/2 c
- evaporated milk - 1/3 c
- water - 1 Tbsp
- soda - 2 tsp
- cocoa - 1/2 c
- shortening - 1/2 c
- powdered sugar - 1/4 c
- Sift together flour, soda, sugar, salt and cocoa
- Beat 10 minutes at high speed
How to make cream-filled cupcakes:
Beat eggs; add sour cream and beat. Sift together flour, soda, sugar, salt and cocoa. Sift into cream and egg mixture; beat until smooth. Add vanilla. Bake at 350° for 30 minutes.Cupcake Filling:2/3 c. shortening1/2 c. sugar1/3 c. evaporated milk1/4 tsp. salt1 tsp. vanilla1/4 c. powdered sugar1 Tbsp. vanilla1/3 c. powdered sugar1 Tbsp. water Mix together shortening, sugar, evaporated milk, salt and vanilla. Beat 10 minutes at high speed. Add 1/4 cup powdered sugar and vanilla. Beat 10 minutes at high speed. Add 1/3 cup powdered sugar and water. Beat 1 minute. Cut out center of cupcakes. Fill and replace cutout piece. Frost cupcakes.Chocolate Frosting:1 c. milk1/4 c. flour1/2 c. butter1/2 c. shortening1 c. powdered sugar1/4 c. cocoa1 tsp. vanilla Beat together milk and flour. Cook over low heat, stirring constantly until thick; cool to room temperature. In small bowl, place cooked mixture along with butter, shortening, powdered sugar, cocoa and vanilla.
