Mushroom stuffing
Ingredients/Components
- pkg - 1 oz
- butter or margarine - 1 Tbsp
- salt - 1/2 tsp
- pepper - 1/4 tsp
- chicken broth
- minced fresh parsley - 2 Tbsp
- medium onion, chopped - 1 item
- egg substitute - 1 c
- fresh mushrooms, chopped - 1 lb
- bacon strips, diced - 4 item
- celery ribs, chopped - 4 item
- rubbed sage - 1 tsp
- chopped celery leaves - 1/2 c
How to make mushroom stuffing:
In a skillet, cook bacon until crisp; remove with a slotted spoon to paper towels. Drain, reserving 2 tablespoons drippings. Saut?© celery and onion in the drippings until tender. Add mushrooms, sage, salt and pepper; saut?© for 5 minutes. Remove from the heat. Stir in stuffing, celery leaves, parsley and bacon; mix well.Combine egg substitute and broth; add to stuffing mixture and mix well. Spread into a greased 13 x 9 x 2-inch baking dish (dish will be full). Dot with butter. Cover and bake at 350° for 30 minutes. Uncover; bake 10 minutes longer or until lightly browned. Yield: 13 cups (enough to stuff one 16 to 18 pound turkey or three 5 to 7 pound roasting chickens).
