Baked mashed potatoes
Ingredients/Components
- milk - 1/4 c
- salt - 1/2 tsp
- egg, beaten - 1 item
- 8 oz - 1 c
- green onions, finely chopped - 5 item
- butter, divided - 2 Tbsp
- small curd cottage cheese - 1 c
- large potatoes, peeled and quartered - 4 item
- crushed butter flavored crackers Hi Ho is fine - 1/2 c
How to make baked mashed potatoes:
Boil potatoes until fork-tender. Drain. Add milk, salt and 1 tablespoons butter. Beat until fluffy. Fold in egg, sour cream, cottage cheese and onion. Place in greased 1 1/2-quart casserole dish.Combine crackers and rest of butter. Sprinkle crackers over top of potato. Bake uncovered at 350° for 25 minutes.
Can be made ahead but wait to sprinkle crackers on top just before baking.
